HUNGRY JACK APPLE PANCAKE WEDGES

TOPPING:

1/4 c. sugar

1 tbsp. cornstarch

1/4 tsp. cinnamon

3/4 c. apple juice

2 c. peeled, sliced apples

PANCAKE:

1/4 c. butter

4 eggs

1 c. milk

1 c. pancake mix

Heat oven to 400 degrees. In pan, combine all topping ingredients. Cook over 
medium

heat until mixture boils and thickens, stir occasionally. Place butter in a pie 
pan.

Heat in oven only until butter melts, approximately 2 to 3 minutes.

In a large bowl, beat eggs at medium speed for 1 minute. Add milk and pancake 
mix

while beating for 1 minute more. Pour into hot pie pan. Bake at 400 degrees for 
20

to 30 minutes. Cut into wedges and serve immediately with warm topping. Pancake 
will

collapse as it cooks.  Enjoy.
