Here's a tried and true egg dish to serve as brunch, or a light supper.
This serves 4.
Hard boil 8 eggs. Peel and cut into quarters or eights, whatever your
preference. Place into a 1-1/2 quart buttered casserole.
Make a 2 cup yield of medium cheese sauce; pour over eggs.
If you want a more substantial richer dish, melt 2 tbsp butter and blend in
about 1 cup breadcrumbs. Layer crumb mixture over eggs.
If using crumb mixture, bake uncovered at 350 dg for 25 to 30 minutes, or
until sauce is bubbly and crumbs are brown.
If not using crumbs, bake covered for 20 to 30 minutes at 325, or until
heated through.
For a hot brunch or supper, serve with hashed brown potatoes and your choice
of cooked vegetable.
For a lighter meal, serve with a green salad or cole slaw.
