This is the buttermilk biscuit recipe I use most often, although I am always 
trying new biscuit, scones and bannock recipes. With this recipe I have 
substituted for the shortening butter or lard.

Buttermilk biscuits 

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup shortening
1 tablespoon sugar-optional 
3/4 cup buttermilk

In a bowl, combine the flour, baking powder, baking soda and salt; cut in 

shortening until the mixture resembles coarse crumbs. Stir in buttermilk; knead
dough gently. Roll out to 1/2-inch thickness. Cut with a 2-1/2-inch, biscuit 
cutter 

and place on a lightly greased baking sheet.
Bake at 450 degrees for 10 - 15 minutes or until golden brown.
