California Raisin Pudding Cake
1 cup all-purpose flour
2/3 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup raisins
1/2 cup milk
2 cups water
1 cup packed brown sugar
2 tablespoons margarine
whipped cream
Sift together flour, sugar, baking powder and salt in mixing bowl. Stir in
the raisins to coat with the flour mixture.
Pour in the milk and stir just until moistened. Do not overmix. Grease a
9-inch square baking pan and spread the batter in pan.
Combine water, brown sugar and margarine in saucepan. Heat just until the
margarine melts and the sugar is dissolved. Carefully pour over the batter in
the baking pan. Do not stir.
Bake in preheated 350-degree oven for 30 to 40 minutes. Serve while warm
topped with whipped cream if desired. Add a dash of cinnamon to the sweetened
whipped cream if desired.
NOTES : This is much like a pudding cake; the batter rises to the top and a
delicious sauce forms underneath.
