There are as many Irish coffee recipes as there are Irishmen... And I
should know, I am one.
here is how I do this:
Ingredients:
about half a cup of good coffee.
One measure of *irish* whisky. Do not use scotch for this. A) it's a waste
of a far better whiskey, and B) it will taste wrong.
two spoonfuls of brown sugar (You can use more if you prefer)
about 15-20 Ml of pouring cream.
method.
1. This first bit is important. Take a teaspoon (one with a longish handle
if you have it) and put it in the glass you plan to use. Pour boiling water
into the glass. The reason you add the spoon is that it absorbs some of the
heat and prevents the glass from cracking.
2. Add the whiskey, then pour in the coffee on top. Leave a little gap
between the coffee and the top of the glass.
3. Stir in all of the sugar. Make sure if you can that all of the sugar is
dissolved. Adding the sugar helps the cream to float.
4. now take your spoon, and sort of balance it on the rim of the glass so
that it sits on top of the coffee. The spoon should be face up. What you
want here is for the curved back of the spoon to rest on the coffee, and not
be submerged. Now pour the cream over the coffee. It will sort of slip
over the edge of the spoon and float on top of the coffee.
If you are looking for a nice variation on this, substitute bailey's for
Whiskey. *smile* that's actually drunk a lot over here and is delicious.
