Healthy Creamy Chicken Chowder

 

1/2 cup shredded carrot

1 cup skim milk

1/2 cup chicken broth

1/4 tsp. ground black pepper

1/4 tsp. onion powder

1 potato, peeled, cut in 1/2" cubes

4 chopped green onions, finely sliced

1/2 lb. boneless skinless chicken breasts, cut into 1" cubes

2 cans (15 oz. ea.) cream-style corn

1/2 cup shredded cheddar cheese

1/4 cup dehydrated potato flakes

 

Method

 

1. Mix all ingredients except cheese and potato flakes in crock/slow cooker.

2. Cover and cook on LOW heat for 5-6 hours or until potatoes are tender and 
chicken is no longer pink.

3. Stir in potato flakes and cook on HIGH, uncovered for 5 minutes until 
chowder has thickened and flakes have dissolved. 

4. Top with cheese before serving.

5. Serves 4.
