Grilled Tuna Steaks

 

1 1/2 pounds fresh tuna steaks, cut 1 inch thick

 

For Marinade:

 

1/4 cup olive oil

1 tablespoon dried oregano leaves

1 tablespoon dried basil leaves

2 tablespoons fresh lemon juice

2 cloves garlic, minced or pressed

1 teaspoon salt

Snipped parsley, for garnish, optional

 

Method

 

1. Cut steaks into serving portions. 

2. Rinse and pat dry with paper towels.

3. Arrange fish in single layer in shallow dish. 

4. Combine oil, oregano, basil, lemon juice, garlic and salt and pour over the 
fish. 

5. Turn over to coat both sides. 

6. Cover. 

7. Marinate at room temperature for 30 minutes. 

8. Remove fish from marinade. 

9. Place over well greased grill, 4 to 6 inches from medium hot coals. 

10. Cook, basting often with the marinade, for 7 to 8 minutes, turning once 
until fish is slightly opaque and flakes easily. 

11. Don't overcook.

12. Arrange fish on heated platter. 

13. Garnish with parsley, if desired.

14. Makes 4 servings.
