Hope everyone had a great memorial Day!
I made my broccoli slaw for our family cookout at my in-laws.
It is so easy and so good!
Here is what you need:
a 16 ounce package of broccoli slaw...use regular cole slaw if you
can't find broccoli slaw.
a 10 ounce (I think this is the size) of broccoli florets
a pint of sliced white mushrooms
a 12 ounce package of grated sharp cheddar cheese
8 slices of bacon, crispy and crumbled
2 cups of mayo
2 to 4 tablespoons of prepared horseradish
1/2 cup sunflower seeds
First I got he bacon going.
I used my large bacon cooker and laid out 8 strips of bacon.
I like using the thick bacon. I find it a bit easier to work with.
I covered the bacon with a paper towel and microwaved on high for 6 minutes.
While the bacon is cooking, I put two cups of mayo in a mixing bowl
and added 2 tablespoons of horseradish sauce.
Tasted and added one more...tasted it and added one more...
For my tastes that was just right.
You want a hint of horseradish at least for this slaw.
I like the taste of horseradish and I like it a little stronger in this slaw.
It really sets off all the different flavors in this dish...but let
your taste buds decide how much horseradish you add.
In a large bowl, a very large bowl, you are going to add all the ingredients.
I add the broccoli slaw and then add the florets.
Make sure the florets are bite size. You might have to slice some of
them in half, thirds, or quarters depending on their size.
I also chop off any long stems and just add them to the slaw mixture too.
Once these are in, add the cheese and the mushrooms.
You might want to break up the mushrooms a bit too if they are big slices.
Now I get my hands in and mix/fold the ingredients in the bowl.
I sink my hands to the bottom of the bowl along the sides and lift
the ingredients up towards the middle of the bowl.
Just lift and let fall...keep this up until you think the slaw is well mixed.
Now for the fun part!
Add in the may and horseradish mixture.
Follow the same method for mixing as above...you might want to turn
on the water at your sink too so you can rinse your hands off after this step.
When the mayo is well blended, rinse your hands and then
add the sunflower seeds.
The bacon should be done and partially cooled by now.
Check it and see if it is crispy enough to crumble easily.
I needed to cook mine about another 2 and a half minutes.
When is was done and cooled, I crumbled it into the mixture.
One more mix with the hands and with the sunflower seeds and bacon
mixed in, it is done! Cover and refrigerate until you are ready to serve it.
It makes a bunch and is really good.
It will disappear fast!
To make it a it hotter, add about 2 teaspoons of white petter to the
may and horseradish mixture.
