SWEET-AND-SOUR PORK ROAST
Yield: 6 servings INGREDIENTS 1/4 cup honey 2 tablespoons Dijon mustard 1/2 teaspoon salt One 2-pound boneless center-cut single pork loin DIRECTIONS 1. Preheat the oven to 375 degrees. 2. Coat a medium roasting pan with nonstick cooking spray. 3. In a medium bowl, combine the honey, mustard, and salt. 4. Place the pork in the roasting pan and coat completely with the honey mixture. 5. Cover the pork with aluminum foil and roast for 40 minutes. 6. Uncover and baste with the pan drippings. 7. Roast the pork uncovered for 15 to 20 more minutes, or until no pink remains. 8.
