Roast Pork

 

1 4 pound loin of pork

salt and freshly ground pepper

1/2 teaspoon thyme crumbled

 

Method

 

1. Preheat oven to 350 degrees. 

2. Put the roast fat side up on a rack in a shallow open pan. 

3. Rub lightly with salt, pepper and thyme. 

4. Roast for 1 ¾ to 2 hours or until the internal temperature reaches 160 
degrees. 

5. Remove from the oven and let rest 15 minutes before carving.

6. Serves 4.
