I always think of cobblers having more of a biscuit or pie crust kind of
topping, while crisps have a topping usually containing oatmeal.

It seems to me that cobblers are more fruit and breadish stuff, while crisps
are just that.crispy. That's my 2 cents worth, anyway. lol don't know the
real technical difference, though.
