At the top of the GMail screen there is an option for screen reader users that says you may want to switch to basic HTML. Jaws will work much smoother if you do that.
Once a message is open, alt + R will let you reply to a message. Arrow down until you hear :subject edit" and you can make any changes you want. It depends on how Jaws is configured as to whether forms mode will come on automatically for you or not. If it does, any of the suggestions on how to delete what is there will work.
