California Carrot Cake

 

This is my friends brother's recipe, he's a Chef in California, that's 
why we named it California Carrot Cake.  It's really moist and delicious 
and we like that it makes a large 9x13 pan! Questions??

California Carrot Cake

2 cups sifted flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
2 cups sugar
1 cup oil
4 eggs
3 cups finely grated carrot
1 cup walnuts, finely chopped
1 cup raisins,

Preheat oven to 350F.  Oil the bottom of a 9x13 pan and line with wax 
paper.  Sift together the flour, baking powder, baking soda, salt and 
cinnamon in a large bowl, and set aside.  Pour oil into a bowl and 
gradually add sugar 1/2 cup at a time, beating  well with mixer on high 
speed after each addition.  Beat eggs until light and gradually beat 
them a little at a time into the oil/sugar mixture.  Continue beating 
until smooth and fluffy.  Gradually stir into the dry ingredients until 
thoroughly combined.  Add carrots and nuts and pour into prepared pan.  
Bake until tests done.  Let cool in pan 20 mins then remove.  Frost with 
cream cheese icing when completely cool.

Cream Cheese Frosting

2 pkgs (8 oz each) cream cheese
2/3 tsp vanilla
2/3 cup butter
2 cups icing sugar

Mix all ingredients and whip until fluffy.
