CHOCOLATE   MOCHA   FILLING  (ABOUT  2  AND  HALF  CUPS)

Combine, cook and stir in the top of the double boiler    over
-----not in------boiling water,  until smooth :

2 oz. unsweetened chocolate
2/3  cup cream
1 and 1/3  cup strong coffee

Then add and stir into the mixture a smooth paste of :

3  tablespoons cornstarch
2 tablespoons cold coffee

Stir and cook the filling for about 8 minutes. Cover and continue
to cook 10 mts more. Meanwhile,

combine and beat :

4 egg yolks
1 egg
1/4  tsp  salt

Pour some of the hot cornstarch mixture over the egg mixture and
then graduall return it to the double boiler. Cook 2 to 3 mts,
stirring lightl.  Remove the filling from the heat and stir
gently  until cook and thickened.

Hello gang, I have moulded chocolate tart shells. I want to fill them with
something made with unwhipped cream and melted chocolate - 35%.
Does anyone have a recipe for this type of filling.
