Banana Brownies
Makes 24
3/4 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1 teaspoon baking powder
1/8 teaspoon salt
6 ounces semisweet chocolate, coarsely chopped
3/4 cup butter, cut up
1 1/4 cups firmly packed dark brown sugar
1 cup coarsely chopped pecans
3 large eggs, lightly beaten
2 firm-ripe bananas, mashed
Preheat the oven to 325 degrees F. Butter an 11 by 7 inch baking pan.
Sift the flour, cocoa, baking powder, and salt into a medium bowl. Melt the
chocolate with the butter and brown sugar in a double boiler over barely
simmering water. Remove from the heat and stir in the pecans, eggs, and
bananas. Mix in the dry ingredients.
Spoon the mixture evenly into the prepared pan. Bake for 25-35 minutes, or
until dry on top and almost firm to the touch. Do not overbake. Cool
completely before cutting into bars.
