Pecan Sweet Potatoes
6 yams 1/2 cup brown sugar 1/3 cup chopped pecans 1 cup orange juice 1 tablespoon grated orange rind 1/3 cup sherry 2 tablespoons butter Cook yams in boiling salted water until tender. Peel and cut in half lengthwise. Place in a casserole one layer thick, sprinkle with sugar and pecans; pour over orange juice, rind and sherry; dot with butter.
