Venison Sausage

 

5 pounds lean venison, ground

2 pounds fat salt pork, ground

5 tsp. sage

4 tsp. salt

4 tsp. black pepper

2 tsp. cayenne pepper

1 small onion, chopped

juice of 1 lemon

 

Method

 

1. Mix ingredients well. 

2. Make into patties and fry or store in freezer.
