Wild pork is becoming a lot more common right now because of the burgeoning
wild boar population. Using it instead of normal farm raised pork would add
more of the "hunter's meatloaf" taste to this recipe. I've been thinking
about constructing a hunter's meat loaf recipe, and this one would probably
make a good starting point.

Venison Meat Loaf

 

Ingredients:

 

1 Tbsp. vegetable oil

1/4 cup butter

2 large onions, chopped

2 cloves garlic, minced

2 pounds ground venison

1 pound ground pork

2 carrots, grated

1/4 cup fresh parsley, chopped

1 egg, beaten

1/2 tsp. dried thyme

Salt and pepper to taste

 

Directions:

 

1. Spread oil over the bottom and sides of a roasting pan.

2. Preheat oven to 350 degrees.

3. In a large skillet melt butter and brown onions and garlic.

4. Transfer onions and garlic to a deep bowl.

5. Add meats, carrots, parsley, egg, dried thyme and salt and pepper and 

mix together thoroughly.

6. Transfer to the oiled roasting pan and shape into a loaf.

7. Bake for 90 minutes or until juices run clear.

 

Note:

 

1. If you cannot find venison, use lean ground beef or buffalo.
