THUMBPRINTS

      I used margarine in this recipe, I omitted the powdered sugar, I used 
sugar free apricot preserves and I used Splenda and these cookies were very 
yummy.

      1/2 tsp baking powder
      1/2 tsp salt
      2 cups flour
      12 tbs unsalted butter, softened 
      1/2 tsp vanilla
      Powdered sugar, optional 
      Assorted jams    
      2/3 cup sugar  

      HEAT oven to 350 degrees. Line 2 baking sheets with parchment paper. 
Whisk first 3 ingredients in a bowl. Beat butter, sugar and vanilla in a bowl 
until light and fluffy. Add half of the dry ingredients and mix until combined, 
then mix in the remaining dry ingredients. Knead a few times to bring the dough 
together.
      ROLL teaspoonfuls of dough into balls and place on baking sheets. Make an 
indentation in the center of each ball with your thumb. Fill each indentation 
with jam.
      BAKE until the edges of the cookies are golden, 20 min. Let cool 2 min. 
on the baking sheets, then transfer to cool completely. Dust with powdered 
sugar, if desired, then serve.
      MAKES 72 SMALL COOKIES...
