When I marinate the meat, I sometimes use bottled Italian dressing which I
then pour out and throw out. I've also heard that it's good to marinate it
in buttermilk, but I've never tried that.

I'm an old country red neck and use to live off of deer meat.
Ilike to marinade the meat overnight to get some of the wild gamey taste
out.
Take one of those roasts out of the freezer and let thaw.
Marinade in coca-cola for about 4 hours at least.
Get a crock pot and place the roast in it.
Take a 12 ounce beer of your choice. Pour the beer over the roast. Cut an
onion into quarters and throw in too. I use a tablespoon of Cajun
seasoning,
but a seasoning of your choice will do.
Put on low and cook for 8 hours. The meat will pull apart with fork.
Eat like this or pull apart and add the bar b q sauce of your choice.
Smoking a roast, I marinade it in the coca-cola. Then pull out and use the
rub of your choice. Rub the rub seasoning all over the roast. Place in the
smoker.
Smoke with hickory chips. I let mine go for 4 hours, then wrap in foil and
smoke for 2 more hours.
You can get some good seasonings from the bass pro shops. They have a web
site.
Try their summer sausage mix with the ground meat.
I also like to use the dale's seasoning. I get this at the grocery store
here in Tennessee. This is good for merinading too .
For the steaks
I take one egg beaten, one cup milk, and 2 tablespoons dale's seasoning
and
mix together in a Tupperware bowl.
Place 4 back strip steaks in the bowl to marinade overnight.
The next morning take the steaks out and drege in flour with salt and
pepper
to taste.
Fry in a skillet with about a quarter inch of grease. About 3 minutes on
each side at medium heat.
Bake a 5 count can of biscuits, and eat the steak in between the biscuits.

I rejoined this list yesterday. I have acquired a deer, processed into
burger, sausage, steaks, and roasts, all separated, vacuum sealed, frozen
and labeled. I've got about 90 pounds of venison in my freezer. So, with
that in mind, I'm now asking for tips on grilling, barbecuing, and smoking
venison. Firsthand experience in the form of tips and recipes from a
blind
person's perspective are preferred. Recipes and tips copied from browsing
the Internet are least preferred, as more help can be gotten directly from
blind people who have had the necessary experience. Thanks.
