I use only silicone muffin pans when I bake cookies. I just follow the directions for the cookie recipe, but instead of placing the cookies on a cookie sheet, I drop them into the cups of the silicone muffin pans. Being silicone, I never grease the pans and so far have had no trouble removing the finished cookies. I just allow them to cool then invert the pan and press each cookie out of the cup onto a plate or into a bowl and I'm done. I find that my cookies turn out perfectly round and the baking time doesn't seem to be effected by the thickness of the cookies. I've never used a metal muffin pan for cookies, so can't help you with that one.

Do you usually just put the tablespoonful or whatever the recipe calls for in? Also, does this change the cooking time at all? I only ask because I'm guessing that the cookies aren't able to spread out as much as they may have, so wonder if the time is different.
