Breakfast Casserole(1)

6 slices white bread, cubed

1 pound sausage, cooked and drained

2 cups grated sharp cheddar cheese

6 eggs

2 cups milk

1 tsp. dry mustard

1 tsp. pepper

salt (optional)

Grease a 9 x 13 pan, preferably glass.  Cover bottom of pan with bread

cubes.  Layer sausage on top of bread.  Sprinkle cheese over sausage.

Beat eggs, milk, and spices together and pour over cheese.  Cover and

refrigerate over night.  Bake at 350 for 45 minutes and serve

immediately.  You can also halve all the ingredients and bake in an 8 x

8 glass pan for the same amount of time.

Variation with Ham

Replace sausage with 8 ounces chopped ham and use 1 cup cheddar and 1

cup Swiss cheese.

Variation without Meat

Omit the sausage or ham.  You can add chopped onion, mushrooms, or red

or green bell pepper instead of the sausage.  You can also vary the

cheese.
