Chinese Chews 3/4 cup shortening (You can use Crisco, but I use unhydrogenated organic palm oil shortening) 1 cup sugar 2 eggs 1 teaspoon vanilla 3/4 cup flour 1 teaspoon baking powder 1 cup chopped dates 1 cup chopped nuts (I like to use walnuts) Powdered sugar (confectioner's sugar) Preheat oven to 375 degrees. With electric mixer, cream shortening with sugar; beat in eggs and vanilla, mixing well; set aside. In medium bowl, combine flour and baking powder, stir in dates and nuts, then add to the batter and mix well with a wooden spoon. Lightly spray a 15" x 10" jelly roll pan with Pam, Mazola, or store brand spray (I use olive oil only). Spread the batter evenly in pan. Bake at 375 degrees for 20 minutes. Remove from oven and cut into 2" x 1" bars and roll in powdered sugar. Let cool, then roll in sugar again. Makes about6 dozen small bars. These freeze well.
