Charles, you are correct. Food should be put on the shiny side of aluminum foil and the shiny side is the one facing you as you unroll it. I've never heard anything about keeping things cold by using the opposite side. I've always used the shiny side for keeping things cold, as well. And so have other people, as far as I know. My parents, for example, who were sighted.
