Yes. Sauté the onion when cooking the hash browns. I absolutely love it. I generally give it a bit of redness with Ketchup when it's done for my own tastes. And yes, I have to make myself eat dinner -- if I wasn't diabetic I'd just skip it, but I know what happens when I skip evening meals, and it's not a happy thing.

Turn until the eggs are firm, then serve up. I suggest not making lunch plans, as this is a real "stick to your ribs" recipe that will last a good long time.
