I think the reason it took so long to bake was that it contained so
much butter -- the butter, sweet potato and eggs all combined equals a
lot of liquid for the proportion of dry ingredients in the recipe.  If
I make it again, I may try using less melted butter.  However, it was
truly delicious!  (The amount of calories must be astronomical!)
