Flourless Chocolate Cake With Marshmallow Cream 14 ounces dark chocolate 3-1/2 ounces butter, which would be a little less than a stick
1-1/2 ounces cocoa powder 2 ounces powdered sugar 4 eggs 1/2 of a 7-ounce jar marshmallow cream Melt half of the chocolate with butter in a double boiler over simmering water. Separate the eggs. Beat egg whites until stiff peaks form. Beat egg yolks in another bowl. Mix egg yolks into chocolate. Combine cocoa and powdered sugar and stir into chocolate mixture. Carefully fold in beaten egg whites. Transfer mixture to an 8-inch round cake pan and bake at 350 degrees for 40 minutes, or until a wooden pick comes out with a few crumbs attached. Remove from oven and let cool. The cake will sink slightly, this is normal. Spread a layer of marshmallow cream over cooled cake.
