Vegetable Burgers

List of 14 items

. 1 cup green cabbage, thinly sliced

. 1/2 cup chopped red bell pepper

. 3 green onions, finely chopped

. 1/4 cup water

. 2 tablespoon minced parsley

. 1 teaspoon dried basil

. 1 cup whole-wheat bread crumbs

. 1/4 cup toasted sunflower seeds

. 1/4 cup cooked brown rice

. 2 egg whites, beaten

. Vegetable cooking spray

 

Directions:

. Coat a skillet with olive oil.

Add cabbage, bell pepper and green onions; sauté for 5 minutes.

Add water a little at a time.

Cook until all liquid evaporates.

Remove from heat; stir in parsley and basil.

. In another bowl, combine bread crumbs, sunflower seeds and rice.

Stir in egg whites.

Add vegetable mixture.

. Drop batter by spoonfuls onto skillet sprayed with vegetable cooking spray 
and flatten to form burgers.

Brown on both sides for 5 minutes.
