Brennan Roasted Organic Veggies
This can be a favorite recipe to make anytime of the year! You can
substitute any organic vegetables you prefer like carrots, potatos, turnips,
parsnips, or broccoli. There are two secrets to this recipe that sweeten and
deepen the flavors of the vegetables and make it kid friendly!
Preheating the baking sheet and using high quality real maple syrup will
help caramelize the vegetables. Use a high quality syrup, like Grade B maple
syrup, which is the healthiest and has the best flavor. The brussels sprouts
should come out crispy and delicious!
Serves: 6
Ingredients:
2 garnet yams, peeled and sliced into 1/2 inch cubes
1 head of cauliflower, any color, cut into 1/2" chunks
1 pound of Brussels sprouts trimmed and cut in half
6 garlic cloves, smashed and chopped fine
2 tablespoons of your favorite fresh herbs like rosemary, marjoram
1/2 cup olive oil
1/2 cup of maple syrup
salt and pepper
Method:
Preheat oven to 450°
Heat olive oil, garlic and fresh herbs over low heat for at least 30
minutes.
Meanwhile, line a baking sheet with tin foil and put in the oven to heat.
Toss veggies in a large bowl, with garlic herb olive oil, maple syrup and
generously salt and pepper to taste.
Remove heated baking sheet from oven with hot pads. Place veggies on baking
sheet in a single layer (if you discover your veggies won't fit on one
baking sheet, pull out a second baking sheet, and prep it the same way you
did the first).
Place baking sheet(s) in the oven and roast for 30-40 minutes. Check veggies
1/2 way through and see if they are browning and need to be turned. If they
look dry, add a little water to the pan so they stay nice and moist. Check
again in another 10 minutes and cook until fork tender and golden brown.
Remove from the oven and serve immediately.
