Fresh Peach Cobbler Recipe, From Helen! Cobblers are a great way to showcase fresh fruit and peaches really shine in this recipe. Feel free to substitute fresh apricots or nectarines in place of the peaches. Frozen fruit will work as well.
Prep Time: 15 minutes Cook Time: 40 minutes Total Time: 55 minutesPT55M Ingredients: . 1-1/4 cups all-purpose flour, divided use . 1 cup granulated white sugar, divided use . 1/2 cup light brown sugar . 1/4 teaspoon salt . 1/2 teaspoon cinnamon . 1/4 teaspoon fresh-grated nutmeg . 1/8 teaspoon ground cloves . 1/2 cup butter, cut into 1/2-inch cubes and kept very cold . 4 cups (about 8 medium peaches) fresh peaches, pitted and sliced . 1 Tablespoon fresh lemon juice . 1 teaspoon fine-grated lemon zest Preparation: Preheat oven to 350 F. For the Cobbler Topping: Whisk together 1 cup of the flour, 1/2 cup of the sugar, brown sugar, salt, cinnamon, nutmeg, and cloves until well-combined. Place flour mixture into the bowl of a food processor fitted with the metal blade. Add the very cold butter and pulse (do not let it run) until mixture resembles coarse grain. A few small lumps are actually desirable. Set aside. In a large bowl, combine peaches with remaining 1/4 cup flour, 1/2 cup sugar, lemon juice, and lemon zest. Toss gently until coated and spoon into a 9-inch square glass baking dish. Sprinkle evenly with the cobbler mixture. Cover baking dish and bake for 15 minutes. Remove covering and bake an additional 35 to 40 minutes longer, until top is browned. Yield: 8 servings.
