Buttercream Frosting
5 large egg whites room temperature
1-1/4 cups sugar
2 cups (4 sticks unsalted butter) room temperature
1 teaspoon pure vanilla extract
Combine egg whites and sugar in a heatproof mixer bowl over a pan of
simmering water. Whisk constantly until the sugar has dissolved and whites
are hot to the touch about 5 to 7 minutes. Transfer to mixer. Beat on low
speed and gradually increase speed to high until completely cooled and stiff
glossy peaks have formed about 10 minutes.Meanwhile in a separate bowl cream
butter until light and fluffy. With the mixer on low speed gradually add the
butter to the egg white mixtureand continue beating until the mixture is
very smooth. Add vanilla extract and beat until combined.
If using this the same day cover bowl with plastic wrap and keep at room
temperature. You can store buttercream frosting in an air-tight container up
to three days before using. Bring to room temperature and stir until smooth
before using.

I have a recipe for buttercream frosting that has egg whites in it. You
whisk the egg whites in a bowl over boiling water for about five to seven
minutes until the sugar is dissolved. Then you take it off the burner and
add the butter and other ingredients. You whip it and it is very light. I
wonder if the egg whites would be cooked enough. Have tasted this frosting
on cakes and it is very light and good. Would like feedback.
