Shoogfly Pie With Basic Pie Shell Dough
(Sundance)

Makes 1 8- or 9-inch pie.

Basic pie dough for 8- or 9-inch pie shell:

 1 cup flour
1/2 cup brown sugar
1/2 cup vegetable shortening
1 cup boiling water
1 teaspoon baking soda
1 cup dark corn syrup
1/2 teaspoon salt
1/2 cup heavy cream, softly whipped

To prepare oven, pan: Preheat oven to 350 degrees. Line pie pan with rolled-out 
dough. Set aside.

To prepare crumb mixture: In mixing bowl, combine flour, sugar and shortening. 
Using pastry blender, 2 knives or fingertips, work shortening into flour and 
sugar until mixture resembles small crumbs. Set aside.

To prepare filling: Remove boiling water from heat. Stir in baking soda. Add 
corn syrup and salt. Blend well.

To assemble and bake: Pour filling into pie shell. Sprinkle with crumb mixture. 
Bake for 40 minutes or until filling is set.
