Thanks for all the help, everyone.  I'll have to get busy andsee what
happens.  It's been years since I've had the time to do much baking, and
there's a lot I've forgotten. I suspect I'll be fine once I get started
again, and I appreciate the refresher.

Muffins really aren't going to rise like that; the worst you should get is a
really big muffin. As long as you don't fill the cups too full, I expect
things will work out fine. Also, if you have an ice cream scoop, that should
work just as well as a cookie scoop, at least for the standard cups.
