I was randomly looking for a cookie recipe and ran into this one. If you
don't have the coffee liqueur, you can use water to replace that. I think
that adding the chocolate chips would be way too rich, but that's up to you
to put it in or leave it out. I hope this turns out well for you. Hope you
enjoy!


Coffee Cookies

2 eggs
2 teaspoons instant coffee crystals
2 tablespoons coffee-flavored liqueur
1 cup butter or 1 cup margarine, softened
3/4 cup packed brown sugar
1 cup sugar
2 1/2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups semi-sweet chocolate chips
Directions:

1 Preheat oven to 325 degrees F 
2 In a small bowl, dissolve instant coffee crystals into the coffee liqueur;
set aside.
3 In a large bowl, cream together the butter, brown sugar, and white sugar.
4 Gradually add eggs and coffee mixture while mixing.
5 Sift together the flour,cocoa,baking soda,and salt. Stir into the creamed
mixture.
6 Finally, stir in the chocolate chips.
7 Drop dough by rounded tablespoonfuls onto a cookie sheet.
8 Cookies should be at least 2 inches apart.
9 Bake for 16 to 20 minutes.
10 Immediately transfer cookies to cooling rack after baking.
11 These keep well at room temperature or refrigerated.
