Hi Mike, here it is again. Hope you like it. Donald from Owen Sound, ONt, Can. 2 cups all purpose flour 1, 1/4 cups sugar 2 teaspoons baking soda 2 teaspoons cinnamon ½ teaspoon salt 2 cups grated carrot ½ cup raisins ½ cup chopped nuts-pecan or walnut ½ cup shredded coconut 1 abble,peeled and grated 3 eggs 1 cup vegetable oil 2 teaspoons vanilla Mix dry and shredded ingredients in a bowl. Combine wet ingredients together and pour into dry. Combine until just moist. Portion into greased or lined cups.
