Chocolate Chip Date Nut Bars

 

Makes 24 bars

 

1 cup chopped dates

1/2 teaspoon baking soda

1 teaspoon baking powder

1 cup hot water

1 cup (2 sticks) unsalted butter

1 cup brown sugar, packed

2 eggs

1 3/4 cups flour

1 1/2 tablespoons unsweetened cocoa powder

1 teaspoon vanilla extract

1 cup chocolate chips, divided use

1/2 cup chopped walnuts or jicama, divided use

 

FOR GLAZE:

 

1 tablespoon unsweetened cocoa powder

1 tablespoon unsalted butter, melted

1 tablespoon milk

1/2 cup confectioners' sugar

 

Method

 

Preheat oven to 350 degrees. 

 

For cookies: 

 

C1. ombine dates with baking soda and baking powder and pour hot water over the 
mixture, stirring to combine.

2. In a medium mixing bowl, use a hand mixer to cream butter and sugar 

until well-blended. 

3. Add the eggs and beat until combined.

4. In a separate bowl, combine the flour and cocoa powder. 

5. In three additions, add the cooled date mixture, alternating with the flour 
and cocoa mixture, stirring until incorporated. 

6. Add the vanilla, then stir in 1/2 cup of the chocolate chips and 1/4 cup of 
the nuts (or all the jicama). 

7. Pour the batter into a greased and floured 9-by-13-inch pan. 

8. Sprinkle the remaining chocolate chips and nuts (if using) on top. 

9. Bake for about 40 minutes (check at 30 minutes if you're using a glass dish) 
until a toothpick poked into the center of the pan comes out clean.

 

For glaze: 

 

1. Combine cocoa powder, melted butter, milk and sugar until it forms a smooth 
glaze. 

2. Spread over cooled cookies and then cut into bars.
