Spicy Mincemeat Bars

 

1 cup butter or margarine, softened

1/2 cup firmly packed brown sugar

1/2 cup sugar

2 eggs

2-1/4 cups self-rising flour

1/4 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cumin

2 cups prepared mincemeat

1 cup chopped pecans

1 cup rolled oats

1 teaspoon vanilla extract

 

Method

 

1. Preheat oven to 350 degrees. 

2. Spray a 15x10-inch jelly-roll pan with non-stick vegetable spray.

3. In a large mixing bowl, cream butter and sugars until light and fluffy. 

4. Add eggs, one at a time, beating well after each addition. 

5. Beat in flour and spices.

6. Stir in mincemeat, pecans, oats, and vanilla until well blended. 

7. Spoon into prepared jelly-roll pan; smooth the top.

8. Bake 25 to 30 minutes or until lightly browned. 

9. Cool in pan on a wire rack.

10. Cut into bars.

11. Makes 4 dozen.
