Hi. Oh my goodness these cookie bars just kept sounding better and better!
At first I wasn't sure about the bar recipe, but then as the recipe
continued with the mint layer and then the chocolate? Oh, I think I may just
have to try these! It just so happens that we just bought some peppermint
extract the other day. I want to try to make something along the lines of a
Girlscout Thin Mint cookie. Yum!

CHRISTMAS BARS 

 

1/2 c. butter

2 squares unsweetened baking chocolate

3/4 c. flour

1 c. sugar

2 eggs

1 tsp. vanilla

 

Method

 

1. Melt chocolate and butter, cool slightly. 

2. Mix sugar and flour, stir in chocolate mixture. 

3. Beat in eggs and vanilla until well combined. 

4. Pour into greased 8 x 8 x 2 inch pan. 

5. Bake at 350 degrees for 20 minutes. 

6. Cool for 15 minutes.

 

MINT CREAM LAYER:

 

1 1/2 c. powdered sugar

3 tbsp. butter

2 tbsp. evaporated milk

3/4 tsp. peppermint flavoring

2 to 3 drops green food coloring

 

Method

 

1. Beat all ingredients together and spread over cooled bottom layer. 

2. Chill until firm, about 1 hour.

 

CHOCOLATE GLAZE:

 

2 tbsp. butter

3 oz. sweetened chocolate

1 tsp. vanilla

 

Method

 

1. Melt chocolate and butter together. 

2. Remove from heat and vanilla. 

3. When cooled, but still liquid, spread over second layer. 

4. Chill 3 hours, then cut into bars.
