Hi. Oh my goodness these cookie bars just kept sounding better and better! At first I wasn't sure about the bar recipe, but then as the recipe continued with the mint layer and then the chocolate? Oh, I think I may just have to try these! It just so happens that we just bought some peppermint extract the other day. I want to try to make something along the lines of a Girlscout Thin Mint cookie. Yum!

Beat all ingredients together and spread over cooled bottom layer. 2. Chill until firm, about 1 hour. CHOCOLATE GLAZE: 2 tbsp. butter 3 oz. sweetened chocolate 1 tsp. vanilla Method 1. Melt chocolate and butter together. 2. Remove from heat and vanilla. 3. When cooled, but still liquid, spread over second layer. 4.
