SWISS STEAK 

 

Makes 4 to 6 servings.

 

1/3 cup flour

1 teaspoon salt

1/2 teaspoon pepper

2 pounds round steak, cut 1 1/2 to 2 inches thick

3 tablespoons vegetable oil or butter or a mixture

1 small onion, sliced

1 can (14 to-16 ounces) tomatoes

 

Method

 

1. Mix flour, salt and pepper. 

2. Using studded meat hammer, pound into surface of meat.

3. In large frying pan with lid, heat oil over medium heat. 

4. Carefully place round steak in hot oil. 

5. Cook on both sides until meat is well browned.

6. Remove to platter.

7. Add onion slices to pan. 

8. Cook until translucent. 

9. Return meat and any accumulated juices to frying pan. 

10. Add tomatoes. 

11. Cover with lid. 

12. Reduce heat. 

13. Simmer for 1 1/2 hours or until meat is thoroughly cooked and tender.
