Hi, Disi, If you are used to cooking on a gas stove, switching to an electric stove would be a challenge, since gas is more responsive and the temperature changes, (lowering or raising the heat) is immediate). Electric stoves take more time to heat up and cool down. You probably know all of this by now.
As for cooking fudge: candy can be temperamental. It is affected by humidity and cooking time. It must be brought to a rolling boil and left to boil without stirring; putting a cold metal spoon in the hot pot can cause some of the sugar to crystallize, which might explain the grainy texture of one batch of fudge. When you remove it from the heat, let it cool slightly before adding the butter and vanilla and beating to thicken it. Be sure too, to use a saucepan with a very heavy bottom so the candy won't stick. I hope this is helpful. Good luck!
