Um, yes you are talking about a burrito, not an enchilada.
There is a burrito with the shredded pork, or chicken, or beef, or beef
tongue
And you can have it fried or plain and they put the sauce over it.

It's basically a burrito filled with spiced shredded pork, if memory serves 
me correctly.  One way you could find out is to call and Garcia's
