APPLESAUCE SPICE CAKE
 
1 box spice cake mix
1 cup applesauce
1/3 cup unsalted butter,  melted
3 large eggs
2 cups sweetened flaked coconut
7.5 oz jar  marshmallow cream
8 oz container frozen whipped topping, thawed
1 cup  halved grapes
 
Heat oven to 350 degrees. Grease and flour two 9" cake pans. In bowl, beat  
cake mix, applesauce, butter, eggs, and 1/3 cup water 30 seconds. Scrape 
down  sides of bowl. Add 1 cup coconut to batter, beat 2 min. Divide batter 
between  pans. 
2.) Bake 28 min. or until done. Cool completely. In bowl, beat  marshmallow 
cream and whipped topping 1 min. or until combined. Place first cake  layer 
on serving platter. Spread with 1/2 cup cream mixture and 1/2 of the  
grapes. Repeat layering.
3.) Frost cake with remaining cream mixture. Press  remaining coconut onto 
top and sides of cake to coat. Garnish with fresh fruit  and edible flowers, 
if desired, then serve.
