Stuffed Baked Potatoes

3 large baking potatoes

Vegetable oil

1/2 cup sliced green onions

1/4 cup (1/2 stick) butter

1/2 cup light cream

1/2 cup sour cream

1 teaspoons salt

1/2 teaspoon white pepper

1 cup shredded Cheddar cheese

1/4 cup (1/2 stick) butter, melted

Paprika

Rub entire surface of potatoes with oil and pierce with a fork. Bake at 400 
degrees for 1 hour or until tender. Let stand until cool to touch. Cut 
potatoes lengthwise into halves. Scoop pulp carefully into a mixing bowl, 
leaving a thin shell.

Saute the green onions in 1/4 cup butter in a skillet until tender. Add the 
green onions, light cream, sour cream, salt and white pepper to the potato

pulp. Beat until well mixed. Fold in cheese.

Spoon potato mixture into shells. Place shells in a 9x13-inch baking pan. 
Drizzle with 1/4 cup melted butter and sprinkle with paprika. Bake at 350 
degrees for 20 to 30 minutes or until heated through. SERVES: 6
