Perhaps the trick is to go with a broccoli cheese soup recipe, sans the broccoli, and then substitute Mexican white cheese or Monterrey Jack for some of the yellow cheese, and add a bit of spice through cumin, chili powder, minced onion, or a touch of pepper juice.
