Joy of Cooking and the big Betty Crocker cookbook are both available from BARD. JOC is more a cooking textbook than a cookbook -- it has a gazillion recipes, but it also has great instructions on how to do things -- for sighted cooks. That said, the basics are so well handled that a few questions here on a particular topic will steer you in the right direction. The Betty Crocker book is a metric buttload of recipes on the basics. There are a lot of classic recipes in it. I tend to use it as a jumping off point more than a by the line recipe book, but I do that with most recipes. (I'm more of an improvisational cook) These two will cover a lot of situations, and also a lot of technique. That said, anything you can do to build knife skills will help more than anything else.
