Joy of Cooking and the big Betty Crocker cookbook are both available from
BARD. JOC is more a cooking textbook than a cookbook -- it has a gazillion
recipes, but it also has great instructions on how to do things -- for
sighted cooks. That said, the basics are so well handled that a few
questions here on a particular topic will steer you in the right direction.
The Betty Crocker book is a metric buttload of recipes on the basics. There
are a lot of classic recipes in it. I tend to use it as a jumping off point
more than a by the line recipe book, but I do that with most recipes. (I'm
more of an improvisational cook) 
These two will cover a lot of situations, and also a lot of technique. That
said, anything you can do to build knife skills will help more than anything
else.

I would appreciate info on what, if any, cook books I can get from either
BARD, NBP.org, or the blind mice mega mall that are loaded with recipes and,
most importantly, tips for the blind cook.  I'm looking for books that
answer the basic questions that often come up like, How do I know when
something is "golden brown"?  Here's the main factor:  I want suggestions
from people who have actually used the book or books they recommend.  If you
haven't used it, don't suggest it.  Thanks.
