Stuffing the bird with citrus, especially oranges or lemons, also will help in keeping the bird moist.

I use roasting bags that you can get at the grocery store. You just season the bird with whatever seasonings you choose and put the whole thing into the roasting bag. It's amazing how well the bag does in keeping the moisture in the meat. The two turkey's I did this way were the best ones I've ever had. When you purchase the bags they will have the cooking times listed based on how many pounds the chicken is.
