Potato salad
Today I decided the hell with the meatloaf and going to do hamburgers instead. So I figured a potato salad would go great with the burger.

Cubed about four medium potatoes placed them in a pot with some chopped up garlic and boil them until they were almost done. ( about 20 to 25 minutes) They had a little bite to them. In other words don't over cook the potatoes, you aren't looking for mash. Poured cold water over them to stop the cooking than made a oil/vinegar dressing.
1/4 cup of olive oil ( use what suits you)
1/4 cup vinegar
a squirt of mustard. About 1 tsp) Would be my guess
Add oregano, basil, black pepper to taste in the dressing and mix well.
Cut a small onion in half,slice half rings as thin as possible and chop up a clove of two of garlic fine and add to potatoes. Pour over dressing and enjoy.
I like this potato salad warm. but it is also good refrigerated.
