Make a focaccia flat bread.
1 cup water
1 package of yeast
a little sugar, a 1/2 teaspoon will do
1 cup of flour
Mix all ingredients well and cover for no less than 1/2 hour
Now get out some basil, oregano and add as much or as little as you like to
the starter. I usually chopped up some fresh garlic and add it too.
Add a tablespoon of olive oil. Do not add more or the dough won't turn out
right.
Mix everything in.
Add enough flour to make a smooth and some what moist dough. About 1 1/2 to
2 cups of flour.
Now add the salt, I use only 1/2 teaspoon but you can use 1 teaspoon if you
must.
Grease bowl and let dough rest for about 5 minutes.
Knead dough until it is elastic. About 5 to 10 minutes.
Roll dough in greased bowl and cover with a towel
Let double in size.
Using the back of a greased cookie sheet, flatten dough out to a about 1/2
inch thick rectangle. Now cut olives of your choice and lay on dough and
punch down, leaving bumps in dough. I usually slice some garlic thin and lay
the calamari olives over the garlic slices.
Let dough double in size and pop in a 400 F degree oven and bake for about
25 minutes or until the edge of the focaccia feels crispy. If you tap the
bottom of the focaccia, it should sound hollow.
