Fried up some jalapeƱo peppers for a sandwich for lunch and had some oil
left in the pan. Wanting a chicken salad, got out a chicken breast, placing
it between two pieces of plastic wrap and took the Worchester sauce bottle
and flatten the breast out to about 1/4 of a inch. Added some soy and
Worchester sauce to the oil, lightly coated the breast with a little flour
that was mixed with black pepper/salt. Fried the breast on one side for 6
minutes and flipped the breast over and did the same. Covered the skillet
with a lid and turn the heat down to a low simmer for 10 minutes. The
breast was done, placed it on a plate and covered it with plastic wrap. When
it was time to make the salad, Placed some leaf lettuce, baby spinach, red
sweet peppers, onions, Calamari and cured olives, cutting the chicken breast
up into the salad. Poured some of the sweet and sour dressing I posted a
while back and had a healthy tasty meal.
