Note also that the term "Authentic Mexican" gets used a lot but there's a wide variation when it comes to regional dishes and even how some menu items are made. (Tacos are a shining example of this, for example) Leaving out the American variations like Cal-Mex, Mex-Mex, and Tex-Mex (my style of choice) you get very different things from the areas on the U.S. border than you do in the interior, Pacific coast, Gulf coast, Yucatan, and the different style found in Mexico City proper. So expect to see some wide variation in recipe ingredients and the resulting products. Also note that there are some items, like fajitas, burritos, chile rellenos, and chimichangas that are American in origin, so their presence in Mexican cooking is a transplant from the states.
